Champagne Edouard Brun 'Réserve' Brut Premier Cru NV is a Pinot-led blend whose generous character comes from a deliberate combination of vessels and reserve wines. Pinot Noir accounts for three quarters of the blend and undergoes alcoholic and malolactic fermentation in barrels; Chardonnay provides the remaining quarter and is fermented in temperature-controlled tanks. Reserve wines contribute continuity, and thirty months on the lees allow the components to integrate. A dosage of nine grams per litre completes the Brut version. Barrel texture, mature reserve material and time together explain its rounded, substantial expression without sacrificing freshness.
