Domaine Paul Pillot Saint-Aubin 1er Cru “Les Charmois” 2020 is a finely etched white Burgundy from a respected Premier Cru climat, offering a beautiful balance of purity and depth. The 2020 vintage in the Côte de Beaune is widely regarded as excellent, thanks to a hot, dry growing season with low yields that delivered ripe, concentrated fruit while preserving surprisingly good acidity, resulting in whites that are both intense and finely structured.

Crafted from Chardonnay, it opens with lifted aromas of lemon zest, green apple, pear, white peach and white flowers over a subtle chalky, stony core, with hints of brioche and buttered pastry from élevage. On the palate, it is medium-bodied with high, mouthwatering acidity and a silky texture, layered with struck match, light vanilla and sweet spice, finishing long with early notes of hazelnut, almond, honey and a gentle flinty smokiness. This is an ideal match for seared scallops, lemon roast chicken, creamy seafood pasta or a simple goat cheese tart, and it has the structure to evolve gracefully with time in bottle.

Now led by Paul’s son Thierry Pillot, who began working at the estate in 1999 and took full charge of winemaking in the mid-2000s, the domaine is known for relatively low yields, restrained use of new oak and a thoughtful, largely organic approach in the vineyards. Thierry favors earlier picking to capture tension and aromatic definition, along with gentle pressing, fermentation and aging in mostly used barrels with minimal bâtonnage, allowing climats like Saint-Aubin 1er Cru Les Charmois, with its limestone-rich soils and cooler hillside exposition, to speak clearly.
