Its structure should be medium-bodied, with softened tannins and a savoury, graphite-tinged finish. Stand the bottle upright before opening, decant gently to separate sediment, and taste soon after opening because an older vintage can evolve quickly in the glass. Pair it with roast lamb, duck, braised beef or Cantonese roast goose.

Jean-François de Pontet assembled the estate in the early eighteenth century, and the Tesseron family acquired it in 1975. For this 1987 vintage, the appropriate historical attribution is Guy Tesseron and the estate winemaking team; Jean-Michel Comme joined Pontet-Canet in 1989 and should not be credited for this wine. The château’s later reputation for intensive vineyard work does not change the methods or personnel applicable to the 1987 bottling.
