Domaine Paul Pillot’s Chassagne-Montrachet Village 2018 in magnum captures the signature tension and purity of top Côte de Beaune Chardonnay, with the added aging potential of the larger format. The 2018 vintage in Burgundy was warm and sunny, giving a generous crop of ripe, concentrated fruit, yet growers like Pillot, who picked judiciously, were able to retain balance and freshness in their whites.

Aromas of lemon zest, ripe pear, green apple and white peach mingle with acacia blossom and a touch of fennel, opening on the palate to a layered, medium-full texture supported by vibrant, medium-high acidity. Subtle notes of creamy lees, fresh bread dough, hazelnut, almond and discreet vanilla from well-judged oak lead into a long, chalky, mineral finish with hints of honey, brioche and gentle smoke as it evolves in bottle. This is a versatile gastronomic white, excellent with roast chicken in tarragon cream, seared scallops with beurre blanc, grilled turbot, or a simple plate of fresh goat’s cheese and crusty baguette.
