Domaine Paul Pillot Chassagne-Montrachet ‘La Romanée’ Premier Cru 2016 is a finely etched white Burgundy from a renowned premier cru slope, delivering a poised, mineral-driven expression of Chardonnay. The 2016 vintage in the Côte de Beaune was marked by severe spring frosts followed by a warm, largely dry summer, resulting in reduced yields but producing concentrated wines with lively acidity and classical balance, a style widely appreciated by Burgundy lovers.

In the glass, it opens with layers of lemon curd, ripe pear, white peach, green apple and acacia blossom, laced with subtle hazelnut and a chalky, limestone-inflected edge. The palate is medium-full and precise, combining creamy lees texture with high, mouthwatering acidity; notes of brioche, vanilla, clove and a touch of butter and struck flint unfold into emerging hints of toasted almond, honey, dried citrus peel and gentle smoke on a long, saline finish. It is an elegant partner for butter-poached lobster, roasted turbot with beurre blanc, or a classic roast chicken with tarragon, while aged Comté or Beaufort also make superb partners.

The family farms their holdings with great care, emphasizing older vines and largely sustainable, low-intervention work in the vineyards to preserve soil health and the clarity of site expression. Grapes are harvested by hand, followed by gentle pressing and minimalist cellar work, with fermentation and élevage in mostly used French oak barrels and extended time on the lees to build texture without obscuring freshness or minerality. In La Romanée, a historic premier cru climat on the slopes above the village, this approach yields wines that are taut, detailed and deeply expressive rather than opulent, emphasizing finesse, tension and a strong sense of place, and the domaine’s understated, traditional labeling underscores their focus on substance and heritage over flash.
