Domaine Paul Pillot Chassagne-Montrachet Village 2018 is a refined white Burgundy that captures the layered, mineral elegance of this celebrated Côte de Beaune appellation in a subtly concentrated vintage. The 2018 growing season in Burgundy was warm, sunny and generous, delivering healthy crops of ripe grapes and producing whites with opulent fruit, supple textures and approachable charm, yet with well-balanced freshness in the hands of top domaines. The nose opens with lemon zest, ripe pear, white peach and green apple, wrapped in white flowers, fennel and a chalky, stony edge.
Tasting Profile & Food Pairing
On the palate it is medium to full-bodied yet poised, with a silken, almost creamy mid-palate from lees aging, notes of brioche, fresh butter and pastry dough, and very well-judged oak adding hints of vanilla and nutmeg. Emerging accents of hazelnut, toasted almond, dried citrus peel and a touch of flint add complexity, leading to a long, mouthwatering, mineral finish. It is a versatile food wine, superb beside roast chicken with morel cream, seared scallops, lobster with butter and herbs, or a simple plate of Comté or aged Gruyère.

The family farms their holdings with a careful, sustainable and largely organic approach, working parcel by parcel to encourage healthy, balanced grapes and moderate yields that emphasize concentration without excess weight. In the cellar, Thierry follows a minimalist, terroir-driven philosophy, favoring relatively early picking for tension and brightness, gentle pressing, fermentation and aging in predominantly used oak with a restrained proportion of new barrels, and extended maturation on fine lees to bring texture and depth while preserving clarity and precision.
