Vintage Character Arnaud Baillot Savagnin 2022 is a dry Côtes du Jura Savagnin. Localised drought and summer heat challenged young vines and some sensitive plots, but the regional wine committee expected a much fuller harvest overall. For Savagnin, ripeness could build in the warmer conditions while careful timing retained the variety's characteristic freshness. The wine stays at 12.5% alcohol, so the warm year does not translate into heavy strength or texture.
Tasting Profile & Food Pairing Wine Enthusiast finds toast and hazelnut in the 2022 wine's medium-bodied, oxidative register, with a savoury, focused palate and a clean restrained finish. Dry rather than sweet, it can handle Comté, mushroom risotto or roast poultry. Gentle air may help its texture unfold, while cool service keeps the savoury close precise. The oxidative note is subtler and less developed than in a traditional Jura Vin Jaune, which matures far longer.
Winery Background Baillot's Côtes du Jura Savagnin comes from parcels around Rotalier, with vines averaging about 45 years old. Hand-picked fruit is sorted, fermented in steel for roughly 15 days, then matured about 12 months in Burgundian oak barrels, only a small share of them new, before unfiltered bottling. Baillot is based in Beaune but also works this Jura site. This is 100% Savagnin, distinct from his Burgundy Chardonnay and traditional Jura Vin Jaune.
