La Manufacture Chablis 'Vaillons Vieilles Vignes' Premier Cru 2021 belongs to a cooler, demanding Chablis year. Early warmth encouraged growth before severe April frost, and the following cold, rainy May slowed the vines. July was also wet and cool, with renewed warmth from mid-August helping the surviving fruit ripen. Such a season placed a premium on careful vineyard work and selection. This Chardonnay comes from old vines on the left bank, rooted in Kimmeridgian limestone over clay. Stainless-steel fermentation and oak maturation frame a style that balances mineral definition with a notably creamy texture. In 2021, the cool summer followed by late warmth gives that creamy style a particularly useful counterweight of freshness and restrained, gradually achieved ripeness.
