Domaine Pierre Ségaut Chablis 'Le Milieu des Chaumes' 2024
Vintage Character
The 2024 Domaine Pierre Ségaut Chablis 'Le Milieu des Chaumes' represents a vibrant expression of the renowned Chablis appellation in northern Burgundy. A challenging growing season marked by cool spring frost and damp weather severely restricted yields, concentrating natural sugars while preserving intense, electrifying acidity across the region. Situated on ancient Kimmeridgian limestone and clay soils rich in fossilized marine shells, the specific single parcel—'Le Milieu des Chaumes'—features exceptional natural drainage and stony subsoils that impart a distinct chalky mineral character to the wine.
Tasting Profile & Food Pairing
Vibrant and sharply focused on the nose, this dry white opens with delicate aromatics of crisp green apple, Meyer lemon zest, white peach, and struck flint. On the palate, a sleek, light-to-medium texture is propelled by energetic acidity, revealing layered notes of pear, white blossoms, and crushed chalk. A saline, oyster-shell minerality carries through a long, invigorating finish that benefits from a brief decanting. Pair this wine alongside freshly shucked oysters, pan-seared sea bass with lemon-caper butter, or Cantonese steamed garlic scallops.
Winery Background
Domaine Pierre Ségaut is a boutique estate dedicated to reflecting the authentic micro-terroirs of Burgundy's northernmost white wine district. Practicing sustainable vineyard management and hand-harvesting, the producer prioritizes minimal intervention to let site specificity lead. Winemaking relies primarily on temperature-controlled stainless steel fermentation and extended aging on fine lees, deliberately avoiding heavy oak to safeguard the pristine fruit and electric tension. This parcel-focused philosophy makes the estate a benchmark for pure, terroir-driven Chardonnay crafted with artisanal precision.
