Tasting Profile & Food Pairing The bouquet opens with ripe red apple, pear skin and citrus peel, followed by wild strawberry, warm brioche, roasted nuts and a distinct chalky note. Winery Background Egly-Ouriet is one of Champagne’s benchmark récoltant-manipulant estates, family-run in Ambonnay since the early 20th century and brought to international prominence by Francis Egly. The domaine is known for meticulous vineyard work, low yields, predominantly organic farming principles and hand harvesting, all pursued with the conviction that great Champagne begins in the vineyard. In the cellar, fermentation and élevage often involve oak for part of the base wines, malolactic fermentation is generally avoided, and the wines spend extended time on lees before release with very low dosage.
