'Palmes d'Or' Gold Brut from Nicolas Feuillatte applies that approach. This non-vintage Gold Brut carries the Palmes d'Or name, the house's prestige label.
Tasting Profile & Food Pairing Ripe apple, pear and brioche lead, with toasted almond and a hint of honey. It is Brut in style, with medium body and high acidity. The palate is full and creamy, with a fine mousse, bright acidity and a long finish. Long cellar ageing adds hazelnut, pastry and dried citrus. Lobster, roast chicken and scallops in butter suit its depth. Serve at about 6 to 8 degrees Celsius in a tulip-shaped or white wine glass. Champagne blends rest on Pinot Noir for structure, Chardonnay for finesse and Meunier for fruit. It also makes a fine aperitif, and the acidity cuts through fried food and richer dishes. Pour sparkling wine gently and let the mousse settle, which helps the aromas and the fine texture show.
Winery Background Champagne Nicolas Feuillatte was created in 1976 and is the brand of the Centre Vinicole de la Champagne, a union of growers' cooperatives founded in 1972 by Henri Macquart. The union is based in Chouilly, overlooking Épernay, and brings together more than 80 member cooperatives. Its aim was to give winegrowers a way to guarantee the sale of their grapes after a surplus harvest. The cellar team is listed under Guillaume Roffiaen. Non-vintage blends like this draw on several harvests so the house style stays consistent. Its Palmes d'Or prestige cuvée was first made in 1985, and Jean-Pierre Vincent was the house's first chef de cave.
