Vintage Character Champagne Edouard Brun Brut Nature Grand Cru NV relies on time in the cellar to achieve balance without an added dosage. The producer gives this cuvée seven years of ageing, allowing the wine's texture and aromatic depth to develop before release. Chardonnay makes up sixty-five percent of the blend, joined by Pinot Noir from Aÿ. The Pinot is fermented in barrels, the Chardonnay in stainless-steel tanks, with alcoholic and malolactic fermentation contributing to their integration. This extended maturation is especially meaningful in a zero-dosage Champagne, where the wine's natural depth has to support its direct, dry finish.
Tasting Profile & Food Pairing Citrus is layered with toasted brioche and honey, creating an aromatic profile that is both fresh and developed. The palate is intense and complex, with a substantial middle leading towards a tense, lengthy finish. Its richness comes through texture and maturation rather than overt sweetness, making the contrast between savoury depth and freshness particularly clear. Oysters would emphasize the direct line of the wine, while pan-seared scallops offer a rounder texture to meet the brioche notes. Serve in a wine-shaped glass and avoid excessive chilling so that the mature aromas can unfold.
Winery Background Edouard Brun founded the house in Aÿ in 1898, and the Delescot family continues its work. Philippe Delescot oversees the vineyards and wine production. In the cellar, juices are kept separate by village and cru before blending, using tanks or small wooden barrels according to the wine. The aim is to let wood complement the fruit without dominating it. Long-established cellars provide a stable environment for maturation, while the family's Premier and Grand Cru vineyards give the blends their geographical foundation.
