Vintage Character Champagne Edouard Brun 'L'Elégante' Brut Grand Cru NV places Chardonnay at the centre of a blend designed to combine finesse with depth. Chardonnay forms eighty percent and is vinified in stainless-steel tanks, while the remaining Pinot Noir comes from Aÿ and is vinified in barrels. Four years on the lees give these contrasting elements time to come together. With a dosage of eight grams per litre, the wine balances a rounded texture against its fresher side. The lengthy maturation is central to its identity, giving the Chardonnay-led delicacy a more developed, substantial setting.
Tasting Profile & Food Pairing White flowers, green apple and lemon peel are accompanied by touches of hazelnut, butter and a mineral impression. The palate is smooth and lively, with bright acidity supporting the middle of the wine. Pinot Noir adds depth without overwhelming the lighter aromatic register, and the finish is long and clean, with pastry and white-peach nuances. Try seared scallops or lobster with a light butter sauce. These dishes echo the wine's gentle richness while leaving space for its fine structure; moderate chilling helps the aroma and texture emerge together in the glass.
Winery Background Edouard Brun founded the house in Aÿ in 1898, and the Delescot family continues its work. Philippe Delescot oversees the vineyards and wine production. In the cellar, juices are kept separate by village and cru before blending, using tanks or small wooden barrels according to the wine. The aim is to let wood complement the fruit without dominating it. Long-established cellars provide a stable environment for maturation, while the family's Premier and Grand Cru vineyards give the blends their geographical foundation.
