A drier August then improved ripening conditions, although yields were reduced in many places. The season puts careful selection and freshness ahead of easy abundance. Tasting Profile & Food Pairing This old-vine Aligoté is lemon-scented, delicate and mineral. Ten months on fine lees in stainless steel give a rounder middle while preserving lively acidity, so it is a fresher style than the oak-aged Rully Premier Cru Chardonnays. The palate stays dry, with a clean citrus finish that suits oysters, seafood or Comté. Serve around 11–12°C rather than ice-cold.
Winery Background Domaine de la Folie is a family property in the northern Côte Chalonnaise. Clémence and Baptiste Dubrulle have managed its enclosed vineyards since 2010. The old Aligoté vines give the wine a leaner, more mineral profile than the estate's Rully Chardonnays. Parcel-by-parcel work keeps those sites recognisable rather than imposing one style.
