Domenico Clerico Barolo 'Pajana' DOCG 2021
Vintage Character
The 2021 Barolo Pajana from Domenico Clerico is a single-vineyard wine sourced from the renowned Pajana plot within the Ginestra cru, a site celebrated for producing Barolos of remarkable depth and complexity. The 2021 vintage in Piedmont benefited from a cool, balanced growing season with timely summer warmth, which fostered wines with vibrant acidity, refined tannins, and expressive aromatics.
Tasting Profile & Food Pairing
Awarded 94 points by Robert Parker’s Wine Advocate, this Barolo reveals an intricate nose of rose petals, wild cherry, and truffle, accented by nuances of licorice and savory herbs. On the palate, it is structured and persistent, offering layers of ripe red berries, dried plum, and earthy undertones, all enveloped in a plush, velvety texture. The energetic, lingering finish hints at the wine’s potential for graceful evolution. Ideal pairings include braised veal shank, wild mushroom risotto, or mature Parmigiano-Reggiano, while its versatility extends to complementing Peking duck for a refined East-meets-West culinary experience.
Winery Background
Domenico Clerico stands as a visionary in the Barolo region, recognized for his innovative approach that harmonizes modern winemaking techniques with respect for local tradition. Since establishing his estate in the late 1970s, Clerico has emphasized meticulous vineyard management and low yields to enhance fruit concentration, with Pajana representing one of his flagship achievements. The estate practices sustainable viticulture and minimal intervention in the cellar, allowing each wine to authentically reflect the unique character of its vineyard. Clerico’s philosophy is rooted in expressing the soul of the terroir, embracing the complexity and nuance that great sites impart. This unwavering dedication to quality and authenticity has earned Domenico Clerico a reputation for crafting some of the most compelling and collectible Barolos available.
