Domaine de Bila-Haut Collioure "Chrysopée" Rouge 2021 is a red Collioure AOP from France’s Roussillon, drawn from one of the Mediterranean’s most dramatic vineyard landscapes. The 2021 vintage was cooler and more wind-influenced than many recent years, which helped preserve freshness and aromatic lift while giving the wine a more finely drawn structure than hotter vintages. Its identity is rooted in the steep, sunlit schist slopes above the sea around Collioure, where poor soils, intense light and maritime exposure combine to produce low yields, savory concentration and a distinctly stony, garrigue-scented profile.
Tasting Profile & Food Pairing
A blend of Grenache and Mourvèdre, this cuvée offers dark cherry, blackberry and plum layered with violet, cracked pepper, wild herbs, licorice and a smoky mineral note that reflects its schist origin. The palate is full-bodied yet controlled, with ripe fruit at the core, firm but polished tannins, and a long finish marked by spice, black olive and warm stone. It pairs especially well with rosemary-roasted lamb, duck breast with olive tapenade, or grilled tuna with Provençal herbs.
