Winery Background
Domaine de Chassorney was founded by Frédéric Cossard in 1996 in Saint‑Romain, Côte de Beaune, after he transitioned from a career as a wine merchant. Today, the domaine farms around 7–10 hectares across Saint‑Romain, Auxey‑Duresses, Volnay, Pommard, Savigny‑lès‑Beaune, and other appellations, with additional négociant bottlings released under his own name. Cossard is recognized as one of Burgundy’s leading natural winemakers, practicing biodynamic and organic farming without synthetic chemicals or herbicides. In the cellar, fermentations are spontaneous with indigenous yeasts, carried out without temperature control, and the wines are neither fined nor filtered. He avoids the use of SO₂, instead relying on careful hygiene and long élevage—typically 12–18 months—in neutral oak or amphorae to preserve purity and terroir expression. The use of qvevris in Volnay is particularly unusual, reflecting Cossard’s willingness to blend tradition with innovation.
