Château Calon Ségur Saint Estèphe 2012, a third growth of Saint-Estèphe, rewards attention to the timing of its harvest. A difficult start to the Bordeaux season gave way to summer drought, while substantial autumn rain threatened later fruit. The estate picked from 1 to 16 October and finished immediately before heavier rain began on the seventeenth. Cabernet Sauvignon dominates the blend, supported by Merlot and a little Petit Verdot. Getting that Cabernet in before the weather broke helped preserve the vintage's combination of ripe fruit, firm structure and a notably composed, rather than overripe, expression.
Tasting Profile & Food Pairing
Cassis and black cherry are joined by tobacco, espresso and spicy wood. The palate has a substantial fruit centre, but its appeal is equally in the fine organisation of its tannins and its sustained, focused finish. Freshness gives the darker flavours direction. Roast beef with a light jus, braised lamb or mushroom-filled pasta would work well; the last provides an option without red meat. These are pairings for structure and savoury complexity, not sweetness. As the wine develops in bottle, fruit and wood should become less separate, though the pace depends strongly on storage.

Calon's heart emblem recalls the Marquis de Ségur's particular attachment to this estate. The property passed to Suravenir in November 2012, marking a new chapter after the harvest had been completed. Vincent Millet had been technical director since 2006. The 2012 was matured entirely in new oak, and its carefully handled wood supports a traditional Cabernet emphasis. Patient selection and a clearly defined estate identity underpin its distinctive Saint-Estèphe character.
