Château Pichon Baron Pauillac 2006 is a Pauillac second growth shaped by a season that demanded active vineyard management. Across the Médoc, a hot July was followed by a cooler August and a more unsettled September. At Pichon Baron, leaf thinning and green harvesting were adjusted from early July through mid-August, and ripeness was checked daily during picking. Harvest ran from 20 September to 6 October. The resulting Cabernet-led blend combines ripe fruit with a firm outline, showing how careful selection could preserve freshness and structure in an uneven year rather than simply maximise richness.
Tasting Profile & Food Pairing
Redcurrant, blackcurrant and spice lead into lightly toasted oak notes. The entry is fleshy but precise, followed by clearly defined tannins and a lively, savoury finish with a saline impression. This is a wine whose texture matters as much as the depth of its fruit. Roast beef, rosemary lamb or mushroom pâté would make sympathetic partners, each bringing savoury flavours without excessive sweetness.
