Vintage Character Bibi Graetz 'Soffocone di Vincigliata' 2022 is a red Toscana IGT from Bibi Graetz, made from Sangiovese. The estate describes 2022 as cooler on average, with stronger summer heat peaks. Vincigliata's elevated, wind-exposed hillside avoided the severe heat and water stress those peaks might suggest, allowing slower, balanced Sangiovese maturation. Harvest extended from mid-September to mid-October. That measured development helps explain the wine's combination of ripe cherry and lively acidity. Altitude, wind and the timing of ripeness on this vineyard matter as much as the warm vintage.
Tasting Profile & Food Pairing The winemaker records ripe red cherry, violet and dried herbs over a deep ruby colour. The dry palate is structured and elegant, with clear acidity, integrated tannin and a persistent savoury finish. Large wooden casks may bring restrained spice, but fruit and hillside character remain central. Roast lamb, wild-boar ragù or hard sheep's cheese can answer its depth. Give the wine some air if young, and keep the glass below warm room temperature to protect the cherry lift. This is a more layered, cellar-shaped Sangiovese than the immediately fruit-forward Casamatta Rosso.
Winery Background Soffocone di Vincigliata is Graetz's single-vineyard Sangiovese tribute to the Fiesole hill where his project began. The 2022 is 100% Sangiovese at 14% alcohol. Galestro-rich ground, a south-west to south aspect and surrounding woodland define the site. Native-yeast fermentation occurs in large 30-hectolitre wooden casks, followed by roughly 18 months of ageing there. It is not a blended Fiesole Casamatta, and its long large-cask regime differs from Colore's selected old barriques. The vineyard name matters because it refers to actual grape origin, not merely a romantic label.
