Vintage Character Bibi Graetz 'Soffocone di Vincigliata' 2023 is a red Toscana IGT from Bibi Graetz, made from Sangiovese. In the Florence hills, heavy winter rain secured vine water reserves for 2023. Spring and summer were hot but had sufficient rain, while pronounced day-to-night temperature differences during harvest helped Sangiovese reach maturity without sacrificing freshness. The estate describes a smaller, fruit-driven and elegant crop, so this is not simply a hot-year wine: its aromatic precision rests on both moisture and cooler nights. How the grapes were selected and matured gives each Bibi Graetz red its own shape.
Tasting Profile & Food Pairing Soffocone's Sangiovese shows red cherry, violet, dried herbs and a darker earth note. The palate is dry and structured, with fresh acidity and firm but ripe tannin carrying a savoury finish. Grilled lamb, mushroom pappardelle and mature pecorino suit its Fiesole character. Time in the glass can make the floral detail clearer; excessive warmth can make the fruit seem broader than it is. It is a different wine from the steel-matured Casamatta, though both come from the Florence hills.
Winery Background Soffocone di Vincigliata takes its name from the Fiesole vineyard where Bibi Graetz first worked. Galestro-rich soil, a south-west to south-facing arc and surrounding woodland give that site an identity distinct from his other hillsides. The wine is shaped through native-yeast fermentation and maturation in large wooden casks, allowing fruit and savoury character to develop together. It is a vineyard-designated wine, separate from the multi-vineyard Casamatta Rosso and the selected old-vine barrels of Colore. Vincigliata names the real grape origin and growing environment of the wine.
