Vintage Character Mollydooker 'The Maitre D'' Cabernet Sauvignon 2023 combines fruit from McLaren Vale and Langhorne Creek. The McLaren Vale part of the season began with plentiful winter rain, followed by a wet, cold spring that delayed budburst and slowed shoot growth. Late flowering and a cool summer pushed harvesting back, and cool, wet autumn weather extended ripening further. These were demanding conditions for growers, but they also encouraged a more measured style of red wine. For the McLaren Vale fruit in this 2023 blend, delayed flowering was followed by an extended, cool ripening period, making this a notably later season rather than a heat-driven rush to harvest.
Tasting Profile & Food Pairing Blackberry and juicy red fruit lead the aroma, supported by milk chocolate and a soft herbal note. Plum fills out the palate, with cigar-box and mocha-cream accents adding a savoury, gently oaky dimension. Tannins are subtle enough to keep the fruit accessible, while the wine maintains sufficient shape to work comfortably with food. The finish brings fruit and fragrant wood together without losing the easy flow of the palate. Roast lamb with rosemary, a grilled beef burger or lentil and mushroom pie would all be suitable partners, echoing either the herbal detail or the wine's rounded richness.
Winery Background The 2023 wine was barrel fermented and matured in a combination of American and French oak, with American wood accounting for 86% of the programme. One third of the barrels were new, balanced by older wood. This measured mix supports the chocolate and mocha character while leaving the fruit prominent. Mollydooker is led by Sarah Marquis, whose selection approach emphasises fruit intensity and balance. The cuvée belongs to a range designed to make the producer's rich, fruit-centred style readily approachable.
