Legacy Peak 'Kalavinka' Cabernet Sauvignon 2021 comes from the Helan Mountain East region of Ningxia, one of China’s most important fine-wine zones for structured Bordeaux varieties. The 2021 vintage is widely regarded as a strong one in Ningxia, with abundant sunshine, a dry growing season, and marked day-night temperature shifts helping Cabernet Sauvignon achieve ripe fruit, firm tannic definition, and freshness. At the foot of the Helan Mountains, this distinctive terroir combines high-altitude vineyards, intense light, low rainfall, and well-drained stony soils, conditions that encourage concentration while preserving aromatic lift.

Tasting Profile & Food Pairing
In the glass, it shows classic Cabernet character with blackcurrant, blackberry, dark plum, violet, mint, cedar, and a touch of dark chocolate. The palate is full-bodied and tightly framed, with ripe but assertive tannins, medium-high acidity, and a core of cassis and black fruit layered with spice, graphite, and a subtle mineral edge. Oak influence adds polish rather than weight, and the finish is long, savory, and structured. It pairs especially well with grilled ribeye, rosemary lamb chops, or Peking duck.

Legacy Peak Estate is among the earlier boutique producers to help define modern Ningxia wine, with estate vineyards planted in the late 1990s in the Helan Mountain East zone. The winery emphasizes careful site expression through sustainable vineyard work, low yields, and selective harvesting, aiming to capture both regional intensity and precision. For Kalavinka, the focus is on Cabernet Sauvignon from older vines, matured in French oak to build texture and complexity without obscuring fruit.
