Vintage Character 2020 was a difficult and traumatic growing season across California, shaped by heat, smoke and wildfires. Many producers made little or no wine from affected lots, so the quantities that were bottled were often small. Where fruit was clean, the wines can be of high quality, but critics advise drinking rather than keeping them very long. Tasting Profile & Food Pairing Blackcurrant, blackberry and plum lead, with cedar, cocoa and graphite. It is dry, full-bodied, with medium-high acidity and high tannins. The palate is full-bodied and dry, with medium-high acidity and ripe, firm tannins. With age it can develop tobacco, leather and forest floor. Roast lamb, braised beef short rib and char siu suit its structure. Serve at about 16 to 18 degrees Celsius in a wide glass, and decant a young bottle for a short time if you like. Cabernet Sauvignon gives structure, dark fruit and firm tannins, which is why it is often blended with softer varieties. Firm cheeses such as Comté also work, as do soy-braised dishes that are not too sweet. A wine of this weight rewards a few minutes in the glass, when the fruit settles and the spice and savoury notes come forward.
